The polyphenolic compounds present in our blend of 3 dried herbs (Cretan mountain tea/dittany/sage) measured 21,2 mg/g have been reported to vary considerably the cultivation location, the harvesting time and tea processing such as drying techniques ultimately affecting the antioxidant properties of tea. The studies done so far have indicated that both harvest time and location need to be considered in order to produce teas with higher polyphenol contents and improved antioxidant quality.
